PB&J Smoothie [Vegan/Gluten Free]

Guys.  I love PB&J.  There is something incredibly nostalgic about it.  I also love the word nostalgic…and may have started this post with this just to use it.  Opps.  

For real, though.  Peanut Butter. Strawberry jelly.  Bread.  Wonderful.  

In the more recent years my PB&J fix has become more sophisticated – wait for it – I toast the bread.  Yep.  PB&J on toast.  Crazy-talk.  But…even more recently – read – February – I’ve decided my favorite PB&J is in a drinkable form.  That’s right.  PB&J smoothie.  

I’ve made variations of this smoothie for years after first having a similar version at a coffee shop long ago.  Something about it just clicked a few weeks back and I started making it…every…single…day.

The PB&J awesome-ness of the smoothie means that you probably already have most of the ingredients on hand.  Like.  In your pantry right now.  Like.  You could walk to your kitchen and make it.  Right now.

PB&J Smoothie
Serves 1
Write a review
  1. 1 cup of non dairy milk of choice + water to get the smoothie to your desired consistency
  2. 1 large handful of greens of choice (I've been loving using frozen spinach as of late!)
  3. 1 large handful of berries of choice (I use strawberries, mixed berries, a pinch, a large spoonful of strawberry jam!)
  4. 2 heaping tablespoons of peanut butter (smooth or crunchy - doesn't matter!) (well, it does, but not in this case!)
  5. Optional add-ins - I love to add ground flax meal (gives it a "bready" taste), but oats would also do the trick! I also often add chia seeds, just ... because :)
  1. Add the milk to the blender
  2. Then add the greens, fruit, peanut butter and optional add-ins
  3. Blend until smooth, adding water until it reaches your desired consistency (I like thin smoothies!)
  4. Pour into a glass. Add a straw. Sip the nostalgic wonders :)
  1. **If you don't have a powerful blender, add the milk and the greens and blend until smooth before adding the rest of the ingredients!
  2. **I use frozen greens and fruit, if your ingredients aren't frozen, you'll want to add some ice cubes!
