May is a major mixed bag of emotions for us, which you can read about here, and here, and here. Monday was Nathan’s Mom’s birthday. Or, would have been, if she hadn’t died [almost] 3 years ago. Seriously. 3 years? Where did that time go?! This falls not-conveniently close to…Mother’s day. …and…the anniversary of her death. Oh, and our wedding anniversary is thrown in there too (that one’s happy, btw).Sometimes I wish the month of May would learn to keep its emotions to itself. Geez, May. So selfish.
This year her birthday was met with a lot of life-distractions. I keep saying it gets easier with time – but it doesn’t. It just gets different. It gets somewhere closer to normal. Whatever normal is now. Happy Birthday, Beth.
To distract us Monday night I made big plates of nachos – actually, tinfoil pie plates of nachos. Don’t judge. Last year on her birthday I ate a peanut butter and chocolate chip sandwich for lunch. And dinner. The tinfoil pie plates were actually kind of genius (if I do say so myself) because it allowed us to bake the nachos up nice and toasty, and then there was no clean up – just toss the tin foil. I also topped them with strawberry jalapeno salsa, which was delightful.
[Moving On–>] Remember how last week I mentioned I had been craving all types of vegan-cheese-products? Well, after posting that last Thursday I found these:
OMG THEY ARE THE GREATEST THINGS EVERRRRRRRRRRRRRRR. Shew. Sorry for the outburst. Please go get some RIGHT NOW. I’ll be here when you get back. Really. Run. Don’t walk. Get them now. I may have eaten this whole bag in one sitting. And..uhm…3 more bags over the weekend. I even mastered the best way to avoid major-cheesy-hand-syndrome:Chopsticks for the dorky-win 🙂

In (much more important) other news – on Sunday I got to be a part of this:My Baby Brother got..ENGAGED! I am so so so excited. Even more excited than the cheese puffs – and that is really saying a lot! I love her to death and am THRILLED that she is now going to be my sister 🙂 It was so special to share in this moment with them. SO. EXCITED.
This weekend Nathan graduates! (Courtney (my new sister) does too!! :)). I am so incredibly proud of him! (and her!). It should be a fun weekend of family, and LOTS of traffic. (thanks, living in a college town, for totally jading my view of graduation weekend). The end of Nathan’s Masters degree will bring some changes – not all of which are completely known to even us yet – but we’re excited to see where the next year takes us! I’m sure there will be graduation pictures next week 🙂
