1 – First, let’s discuss the Elephant in the Room (for North America, at least). This weekend was great, but I just feel like it was missing something.
Oh yeah. One whole hour of precious sleep. I tried to be good and go to bed early on Saturday night – but then I just laid awake for hours thinking about how early 6am would feel when it was really, in my brain 5am. Sunday morning wasn’t too bad. Monday was a different story. On a plus note, Indy [The Cat] has not yet adjusted and wanted nothing to do with being fed at 6 (aka, 5)am. I’m certain that won’t last long.
3 – Remember last week when I mentioned my Instant Pot had just arrived? Uhm. I am kind of obsessed with it. It arrived Wednesday night, and I cooked everything I ate in it the entire weekend. In fact, Sunday night I used the stove to boil water for tea, and realized that I hadn’t used the stove at all since Wednesday. Which is impressive, since we cook 98% of our food. I have made two batches of yogurt, tons of steamed fruit, a big batch of soup (which only took 21 minutes, and has lasted us 4 days), and risotto [IN FIVE MINUTES].
4 – Speaking of yogurt, having it in my life again has been amazing. Recipe / video / etc coming next week. Have any of you seen me on video? Bahaha. Don’t get your hopes up for anything amazing. – I don’t edit them – ha!
6 – I am taking Thursday and Friday off of work (because Nathan is on Spring Break this week), and I am really excited for a small break. I keep forgetting that I have it off, and then looking at my calendar and getting super excited again. Maybe that’s what Alzheimer’s feels like? [Bad joke. Alzheimer’s sucks. But sometimes you just have to laugh].
7 – This article, about ‘Exchanging a Blanket for a Code Blue‘ is so amazing. From being there myself, a gift like this to families is priceless.
8 – [Happier Thoughts] Making risotto in only 5 minutes the other day gave me much more outside time. 65 degrees? Yes please (by the way, the next day, it was 18 degrees)9 – Even Indy [The Cat] got to enjoy outside time (he’s an indoor cat). Don’t judge us for having a harness and leash on him. That’s a third story deck, and he doesn’t seem to understand that he’s three stories up. 🙂
11 – When you read this I’ll be enjoying my two days off, so if I’m slow-to-respond, that’s why. I hope everyone has had a fabulous week and has a great weekend!
