Mock Tuna Salad [Vegan / Gluten Free]

A strange thing happened when I quit eating meat.  I quit wanting it.  From day one.  This was unlike any other diet change I’ve made.  Everything else I continued to crave, at least for a little while.

The only exception to the sudden meat aversion is Tuna Salad.  And I have no clue why.  I never even loved tuna salad when I ate meat, but it’s the only thing I still wanted.  Except I really didn’t.

It wasn’t long until I found a Mock Tuna salad recipe.  And it is pretty awesome.

I haven’t made it in a while, but I made it again tonight.  Awesome-sauce.

I make it as prescribed above, but I add chopped onion and garlic powder.  I left out the relish but added a teaspoon of mustard.  I also used Tamari instead of the soy sauce to make it gluten free.  Tonight I chopped up a bit of apple and kale, and ate it with some brown rice snaps.  Oh…I also make it totally lazy-way, I just put all of the ingredients in the food processor together and blend them up.
