Hike Day

Being the second weekend in April, most parts of (the northern hemisphere) are experiencing spring.  But, in true mountain town fashion, it was in the 30s and snowing most of this week here.  So, today when the temperature rose to a balmy 50 degrees Nathan and I decided to get out and soak in some Vitamin D.

We went on a slightly boring but nice 6 mile hike.

We walked down from the white house way up there.

And then back.  Back was much harder, according to Nathan.

We’re hoping to hit our favorite trail tomorrow, when it is supposed to be even warmer.

When we got back we were starving, so we decided to make salads.  Since it is going to be warm all week, we decided to get a lot of salad stuff and make a salad bar of sorts for the fridge.

Protip: take pictures of really dumb activities, like washing lettuce, that no one will care about in the slightest.

Here is our ‘salad bar’ on the counter. Please ignore the messy kitchen behind the counter. We had: lettuce, kale, spinach, carrots, radishes, orange bell peppers, cucumbers, sirachia (uhm, not sure if we put that on our salad), green onion, tomatoes, avocado, butter beans&chickpeas, and grapes.  I also meant to but forgot added some cashews.  And pepper.  And garlic powder.  And Nathan added pepperjack cheese.  Awesome salads.

After lunch we cooked waffles for the week (we like to make them in bulk and stick them in the freezer for quick morning toasting).  I adore this vegan/gluten free waffle recipe. They are seriously the greatest homemade waffles I have ever made (even before vegan/gluten free recipes were a norm for us).  The only thing I change about the recipe is that I omit the dry sugar, and add a dash of cinnamon.  I also used maple syrup as the wet sugar.

I will do a post soon about making homemade brown rice flour (used in the waffle recipe)! Hint – it is mega easy!

Hiking and eating awesome veggies has really made me fee stellar today.  I think the large dose of sunshine played the biggest part!  Also getting to spend time with Nathan!
